This recipe came from Stephanie – she’s so full of great ideas! I just had to put it on the blog so I could find it easily and share it with all of you.

This recipe makes quite a lot of tomato soup so if you need a small batch, I got you covered HERE.

Zesty Tomato Soup

1 T olive oil
3 cups roughly chopped onion
2T minced garlic
1T cumin
1tsp dry basil
1tsp crushed red chili flakes (can always add more or less for spice)
5# stewed canned tomatoes (diced is fine)
1-1/2 lbs crushed canned tomatoes
2 cans tomato paste
1/2 gallon vegetable stock
(optional) – to add an extra kick, toothpick swirl of Black Pepper Vitality essential oil

  1. Sauté the onions and garlic with the oil in a large stock pot for about 5 minutes or until onions are translucent.
  2. Add all the dry seasonings and sauce for another minute.
  3. Add the vegetable stock and all tomato products. Reduce the heat to a simmer and cook for 30 minutes.
  4. Use your immersion blender to make the soup smooth to your liking (I actually like some chunks left in it!).
  5. (optional) – to add an extra kick, toothpick swirl of Black Pepper Vitality essential oil

So the big question is… do you have a desire to instantly have grilled cheese with your tomato soup?!?! Do you top your soup with anything fun or fancy? 🍅 Tell us in the comments below!
